Saved Views vs Lists
You can create both lists or saved views on HubSpot both have a similar setup but function in different ways.
Lists: focus on the contacts and companies which meet the criteria
Saved Views: allow you to filter the Object list you are looking at.
What's important to know is that Saved Views only use deal properties as filters while Lists can use all Object properties. When it comes to filtering the deal pipeline, you will always use Saved Views. Lists are more relevant when looking at Contacts and Companies.
